Abstract

GUZMAN LOAYZA, Deysi  and  CHAVEZ, Jorge. Chemical compositional study of nopal (Opuntia ficusindica) cladophyll for human consumption. Rev. Soc. Quím. Perú [online]. 2007, vol.73, n.1, pp.41-45. ISSN 1810-634X.

The present work was carried out in the laboratories of the Chemistry Academic Department. The primary objective was to verify that the nopal (Opuntia ficus-indica) cladophylls can be used for human consumption and to determine their chemical composition and nutritional value in order to be incorporated in a daily diet. The nopal cladophylls samples were taken from the district La Joya, Arequipa, Perú. These samples were collected when they were approximately one month and one year old and thorns and impurities were removed before analysis. Chemical analysis included moisture, protein, fiber, lipids, ash, carbohydrates, vitamin C and mineral elements for each samples. Food products prepared with cladophylls were given to an untrained panel and it was accepted.
