This is a research about dietary fibers from common medlar (Mespilus germanica) collected in the Sacred Valley - Cusco - Perú (approx. 2300 m.o.s.l.) that reveals the importance of common medlar as a source of dietetic fiber. For this, the dietary fibers were extracted using standard gravimetric methods and purified; immediately it was obtained the IR spectra in a Nicolet Abate 380 spectrophotometer. After that, it was studied the conduct of dietary fiber involving the physicochemical properties such as density, viscosity, surface tension and heat capacity at different temperatures; and also it was analyzed some functional properties such as water-holding capacity, oil absorption capacity and capability swelling and then compared with the literature, founding consistent results. The results of the study, show the subsequently contents of pectin, cellulose, hemicellulose and lignin: 8,44 %, 7,68 % of 4,98 % and 0,62 %, respectively; the characterization by IR reveals the identification of charasteristic functional groups of these dietary fiber, as for exmple the streach in 1750 cm-1 for C=O group. Finally, it was found that the common medlar is a source of dietary fiber with excellent balance, because it keeps a proportion of 56,54 to 43,46 % of Soluvel Dietetic Fiber to Insoluvel Dietetic Fiber (SDF: IDF).
