The antioxidant properties of the yellow guava variety (Psidium guajava L.) have been evaluated using a system that generates hydroxyl radicals constituted by ascorbate/Cu-II. The effect that the presence of antioxidants such as EDTA, thiourea, manitol would have in the mentioned system, have also been studied. The yellow guava in presence of ascorbate/Cu-II decreases in a discrete way the production of hydroxyl radicals, effect that diminish when thiourea, manitol or EDTA is added to the system. The inhibitory effect that the guava has over the generated hydroxyl radicals by the ascorbate/Cu-II system, depends on the guava concentration.
