Abstract

The results of this investigation work have demonstrated that the combined use of several chromatographic techniques like: thin-layer chromatography, column chromatography, preparative thin-layer chromatography and liquid chromatography of high resolution, allows to simplify the chemical complexity of the diverse components present in maca samples; being achieved the detection of sterols in the lipidic fraction of maca, as well as the identification and quantification of the β-sitosterol. The appropriate quantities of sample for the sterols extraction have been 5g of dry flour of maca (HMS) and 8g of pill of maca (TM), obtaining 0,18 mg and 0,22 mg of β-sitosterol by gram of sample, respectively. The detection was quick and precise at the same time of retention of 6,90 min.
