The n-propyl gallate is an antioxidant for food, oils and emulsions. The study were carried out to synthesize n-propyl gallate using a system made up of tannic acid, tannase immobilized in quitine and n-propylic alcohol. The method consists of an enzyme transesterification, which tannase that was immobilized with quitine through glutaraldehyde linking agent, quitine was obtained from the decks of Cancer setosus (crab). The tannic acid contributed with esterified gallic acid and shifted in favour of npropyl gallate with n-propanol alcohol. The performance of detention was 70%, while the final product reached 74% of yield, determined by UV¬spectrophotometry and high-performance liquid chromatography (HPLC).
