Abstract

Anthocyanins, polyphenols, antioxidant activity of purple sachapapa (Dioscorea trifida L.) and evaluation of lipid peroxidation in human serum. Rev. Soc. Quím. The total content of anthocyanins, total polyphenols were determined spectrometrically. The anti-oxidant activity of the Dioscorea trifida L extracted pigments was evaluated using different anti-oxidant assays including: free radical scavenging (DPPH•, and ABTS•+), as well as superoxide anion radical scavenging. The in vitro anti-oxidant activity of Dioscorea trifida L extracts against the lipidic peroxidation in human serum was evaluated at different concentrations. The largest inhibition percentage (66,37%) was achieved at the extract concentration of Dioscorea trifida Lof 2,06 mg/mL. The inhibition coefficient to 50% (IC50) was 1,824 mg/mL. The pigments extracted from purple sachapapa are natural colorants that exhibit excellent anti-oxidant activity and offer the potential to be beneficial for health and that could be applied in the food and health science fields.
