The unsaturated edible oils are very appreciated by the public, in the present study the oil from the larvae of the coleopteran Tenebrio molitor was extracted. The fat percentage determined was 38,44% . The indexes determined were saponification (192 mg KOH/g of fat), iodine (89,8 g I/100 g of fat), acidity (1,65%) and peroxide (2,4 meq O₂/kg of fat). The gas chromatography results of the oil showed that it contained 77,93% of unsaturated edible oils. The acute oral toxicity test did not show adverse reactions in the animals used.
