Abstract

The morphology and chemistry of the TC, PM 581 y TJ cultivars of purple corn cultivated in the distric of La Joya in Arequipa - Perú was evaluated in the investigation. The results indicate highly significant differences at p<0,01 for the plant height at the 8, 15, 30, 60, 90, 120 and 150 days after sowing, and significant differences at p<0,05 for weigh of plant and the morphological characters such as ear diameter, cob diameter and cob weight at the harvest. The anthocyanins analysis and total phenolic compounds from the cobs show significative differences at p<0,05, where PM 581 stood out; the antioxidant activity at the times 1, 3, 5, 10, 15, 20, 25 y 30 minutes, indicates highly significant differences at p<0,01 between the extracts from the cobs and standard solutions of gallic acid and ascorbic acid. Proximal analysis of the grains revelead values reported in the literature.
