Abstract

As a part of a project with Danper Peru, the content of phenolic compounds and the antioxidant activity of several artichoke (Cynara scolymus L.) extracts have been evaluated. The total content of phenolic compounds, expressed as mg of gallic acid was between 93 and 117 mg per gram of extract, depending on the sample and processing. The antioxidant activity of one gram of the sample with the highest amount of phenolic compounds was comparable to the activity of 47 mg of gallic acid.
