Abstract

SUAREZ, Silvia; ALE, Neptalí; TRABUCCO, Juan  and  SANABRIA, Oswaldo. Polyphenols, micronutrients minerals and antioxidant potential of native potatoes. Rev. Soc. Quím. Perú [online]. 2014, vol.80, n.2, pp.108-114. ISSN 1810-634X.

The study was conducted on five samples of native potatoes from the province of Andahuaylas, department of Apurimac, for the 2012 crop. It was measured the antioxidant capacity, the content of polyphenols and mineral micronutrients Cu, Fe, Zn, Se and Mn. The antioxidant capacity was determined by the uptake of DPPH and ABTS.+ radicals. Minerals were determined by atomic absorption. The antioxidant capacity expressed as TEAC-ABTS ranged from 18.5 to 35.6 mmol/100 g of soluble solids , and the range of TEAC-DPPH was from 1.28 to 2.34 mmol/100 g soluble solids, both showed a positive correlation ( r = 0.91) . Polyphenol content ranged from 23.99 to 49.52 mg EAG/g ss , likewise showed positive correlation with TEAC-ABTS (r = 0.971). In all these essays, the sample 13 SJ -JP was the one that showed the best results. The iron and copper content was higher in the sample 28 SJ-JP, the sample 13 SJ-JP had the highest content of manganese and selenium, and the WR sample exhibited the largest zinc composition followed of the sample 13 SJ -JP. The five samples of native potatoes contain polyphenols and mineral micronutrients that explain the antioxidant activity.
