This research aimed to determine the influence of the concentration of total reducing sugars (ART) of the bracts of Cynara scolymus L. var. lorca (Asteraceae) "artichoke" biomass production in Candida utilis var. major. For this purpose built four stirred tank bioreactors and capacity 1L aerated. The bracts of artichoke were cut, weighed, dried, ground, and sieved to a size of 0.5 mm. Subsequently extracted "ART" with solutions of NaOH and 1.25% H2SO4 and water in a hot system in autoclave for 30 minutes. The fermentation broth was supplemented with ammonium sulfate. The cultivation was reactivated in Sabouraud Agar and inoculum broth was placed in standardizing Sabouraud at a concentration of 3.3 × 107 cells / mL. Each bioreactor was added 630 mL of fermentation broth at concentrations of 1, 2 and 3 g / L and 70 mL of ART inoculum addition was provided a bioreactor witnessed with Sabouraud broth and inoculum. The process was carried out at pH 5.0-5.5 for 36 hours at 25 ± 1 ° C. Once the process is to determine dry weight biomass and residual total reducing sugars.
